Fat free sponge

Hello,
Would anyone have a simple yet effective recipe for a fat free sponge? I've been making sponge for the pack lunches but would like to try a lighter version!

I'm not sure if it's what you're looking for but I've got a recipe for a Sultana Tea loaf cake which has no fat in it if you're interested?

Try this.

3 eggs
3oz caster sugar
3oz plain flour

Grease and line 2 7" backing tins and drege with a mix of flour and caster sugar.

Whisk the eggs and sugar in a large heatproof bowl over hot water untill doubled in size and leaves a thin trail when you lift the whisk. Remove from the heat and whisk untill the mix cools (about 5 mins)
Sift in half the flour and fold with a metal spoon. Sift in the rest of the flour.

Pour into tins, tilt to cover the tin so you dont knock out any air. Bake at 190 c for 20 - 25 mins.

Thank you very much for both the replies. Could I please have the recipe for the fruit loaf as I quite fancy attempting that. I'm going to try the fatless sponge today so thanks for the recipe. I will of course at icing and sprinkles as the children would be horrified if they were absent!

Just thought, what about muffins.
They are generally fat free as they are more of a batter type mix. You can chuck fruit in too. I have made some redcurrant ones today. The redcurrants have been sat in the fridge for days with no one going near them. Bet they will all be eaten now they are in muffins. :D

Sultana Tea Loaf

225g sultanas
175ml cold black tea
225g self raising flour
pinch salt
175g demerara sugar
1 large egg

Soak sultanas in tea for a couple of hours.

Preheat oven gas 4, butter a 2lb loaf tin
Sift the flour into the sultanas and tea mixture, and then add the salt and sugar and stir in.
Beat the egg lightly then stir that in too.
Spoon into loaf tin and bake for about an hour.

Easy to make and turns out very moist and tasty.
