I am going to have a go at making Faggots!!!

Oh man! Yesterday at work, my mate was making my mouth water describing these faggots he made at the weekend with beer in the gravy.


I don't know anything about cooking and am not even any use at warming things up, however after reading "Bad Food Britain" (which is highly recommended) and listening to my mate, I am feeling inspired to cook something from scratch!!!

Have been dieting for two weeks (having a weight loss competition with that same mate from work so the recipe thing could be him trying to sabotage me). Anyway, I have lost 3lbs which I am quite pleased about! :D

Always think about the weight loss in packs of butter!!! That is my trick, so when you have been really 'good' all week and then lose 1/2 pound and feel bad, think of butter!!!!!

Looking at packs of lard at the supermarket helps as well - just one 250g pack makes you think.......

I showed my American husband the photo of the faggots - describing them as 'meatballs in gravy' . He enjoys all the cross-cultural linguistic slips I make - but my 4-yr old daughter might generate some odd looks at pre-school - "we had faggots for dinner last night, Miss"! :lol::lol::lol:


BTW, although I love faggots (& plan to make the recipe) I have a vivid faggot-related memory to share with you.

Years ago, I got home late from the theatre, starving hungry. Only thing in the larder was a can of faggots. Opened the can, dumped in a saucepan . . . & threw up!

Thanks Dan that looks like a lovely recipe and by chance I have all the ingredients in the house right now..... so guess what I'm going to cook tomorrow :wink: (I had been wondering what to cook with my leftover lambs kidney currently languishing in the freezer- I bought too many for Sunday's lamb hotpot :oops: )

Mind the food wasn't the only thing that was tasty in that leaflet. Firemen always get my taste buds going :oops::roll::roll::wink:

Ali, I'm being fairly pathetic here, but somehow my computer won't let me cut and paste the recipe and it's a bit of a long one to type out, especially because it's on a very pretty photographic background which I'm really reluctant to print out... it'd use masses of ink :roll:

I must admit Dan is very helpful around the house, not sure how he will feel after cooking his first 'proper meal' and then being faced with a mountain of washing up.


I think we may be getting a dish-washer after this (hopefully) Although I don't think we could get one in our kitchen now :(

Braised Faggots with Onion Gravy.


Feeds 6

Time to prepare


15 minutes


Time to cook


Approximately 1 hour 40 minutes - 2 hours


Oven temperature


Gas mark 4, 180°C, 350°F



450g (1lb) lean minced beef

100g (4oz) lamb’s liver, finely chopped

100g (4oz) streaky bacon, finely chopped

1 small onion, peeled and grated

2 garlic cloves, peeled and crushed

15ml (1tbsp) freshly chopped parsley

10ml (2tsp) fresh thyme leaves

10ml (2tsp) freshly chopped sage

50g (2oz) fresh white or brown


10ml (2tsp) English mustard

Salt and pepper


Onion Gravy:

15ml (1tbsp) sunflower oil

2 large onions, peeled and finely chopped

15ml (1tbsp) plain or sauce flour

300ml (1/2pint) ale

600ml (1pint) good, hot beef stock

Dash Worcestershire or brown sauce

10ml (2tsp) dried mixed herbs




Prepare the onion gravy; heat the oil in a large saucepan. Add the onions and cook over a moderate heat for 4-5 minutes.

Add the flour and cook for 2-3 minutes, stirring occasionally.

Gradually stir in the ale, stock, Worcestershire or brown sauce, seasoning and dried mixed herbs.

Reduce the heat and simmer for 5 minutes.


Make the faggots; in a large bowl mix together the faggot ingredients and

shape into 12 golf ball-sized balls.


Transfer to a 1.2L (2pint) rectangular ovenproof dish or roasting tin and carefully pour over the gravy.

Cover with foil and cook in a preheated oven for 11/2-2 hours.

15 minutes before the end of the cooking

time, remove the foil and return to the oven.




Serve with a creamy combination of mashed potatoes and spring onions.




If preferred omit the ale and increase the quantity of stock to 850m(11/2pint).

Serve any leftover faggots cold as a sandwich filling or with crusty bread

and a green salad.
