chickencam Posted August 4, 2010 Share Posted August 4, 2010 I have a family friend coming for dinner tomorrow night, he is type two diabetic and has said that some fruit and cream for pudding would be fine. I made a lovely peach melba the other night and I was going to do some poached peaches, not in syrup but fruit juice with the raspberry sauce and I wanted some suitable ice cream to go with it. chickencam Posted August 5, 2010 Author Share Posted August 5, 2010 i have just come back from trawling the shops, and it seems that you can buy dairy free, fat free, lactose free, but not reduced sugar. He did say last night that some fruit and cream would be fine, so I have bought some clotted cream and he can have it with some home grown raspberries and some nectarine. Taken from the website - ‘Frank's Ice Cream has been manufacturing premium ice cream for 80 years has won numerous regional, national and international awards including the prestigious European and British cups. I am glad that I didn't find any for him because he said he tried some once and really didn't like it, but it is worth knowing just incase i have another diabetic dinner guest. Tara.F Posted August 11, 2010 Share Posted August 11, 2010 I'm sorry I've missed your dinner but for future reference here is how I make beautiful, healthy sugar free ice cream for my kids! I buy over ripe bananas when they're cheap and peel them, cut into chunks and freeze them on a tray. When the girls want ice cream I buy a tub of elmlea whipping buttermilk (pretty much all supermarkets sell it) bung it in the liquidiser with the frozen banana chunks and blitz. Too soft? add another banana chunk. Too stiff? add some more buttermilk. It makes quite a soft ice cream and needs to be served straight away but it is really delicious! We make a similar thing with natural yoghurt, frozen banana for sweetness then frozen strawberries, it can be served as a stiff smoothie or as ice cream.
