Here is one of my favourite easy Vegan recipes --Sweet potato & black bean quinoa chilli -  just chop everything and throw in the slow cooker

1 Large sweet Potato, 1 red onion, 3 garlic gloves, 1 red pepper, 1 can black beans, 2 tbsp tomato puree, 1 tin tomatoes, 1/2 cup quinoa, 1 1/2 tbsp of chilli powder, 2tsp cumin, 2tsp paprika, 1tsp coriander

This was my first every vegetarian meal I tried - and loved it.

Pineapple or Mango salsa

Had a very ripe pineapple that the children asked for them didn’t eat so lunch was wraps with pineapple salsa.  Recipe is also good with mango 

 

Small pineapple diced (or a large tin) 

Red and orange pepper diced large

handful finely chopped Coriander

1 clove garlic, crushed (I cheated and used heaped teaspoon of paste

1/2 small red onion finely diced

small chill deseeded and finely chopped

Juice and zest of a lime

Mix it all together.  Season,  Cover and leave in the fridge for at least an hour.  Tastes even better the next day

Decided to be frugal and make chilli from dried beans.  Forgot how much they swell up.  Will be cooking lots of bean dishes 😂

Vegetable/bean chilli 

1tablespoons oil

1 large onion, finely diced

4 cloves of garlic, finely minced

2 tsp cayenne chili powder*

1 tablespoon ground cumin

1 cinnamon stick

2 peppers, diced

2 medium carrots, finely diced

2 celery stalks, finely diced

2  tins of chopped tomatoes

2 tins kidney beans

1 tin Cannellini beans

1 large tin of sweetcorn or large mug of frozen corn 

2 tablespoons tomato puree

1 tablespoon smoked paprika 

 

*( 1-2 tablespoon if kids aren’t having any)

Fry the vegetables and garlic for 5 mins. 

Add spices. Fry for another minute.

Add tomatoes, beans, sweetcorn and tomato puree.

Season 

 

If cooking in a slow cooker - cover and cook on low for 3 hrs

 

If cooking in the stove - add an extra tin of water or vegetable stock, cover and simmer gently for 1.5 hours adding more water/stock if needed

If you want a thicker chilli, blend a cupful of the cooked chilli and stir through before serving

This is the boiled fruit cake I used from way back on here

Hi I tweaked my recipe it is as follows

 

Boiled Fruit cake

 

1lb mixed dried fruit - cheapest does just as well

1 cup water - I use 1 cup port

1 cup dark brown sugar

6 oz butter

1 teasp bicarb

throw in some chopped nuts

1tablespoon treacle

boil for 15 minutes

allow to cool - can leave overnight

 

add

2 beaten eggs

1 cup self raising flour

1 cup plain flour

1/2 cup cherries chopped and dredged in flour to stop sinking

 

Put in baking tin which is lined with parchment

 

Bake at 150 for about 2 hours - mine is usually a fast baker so takes less time - is a wonderful moist cake with such a flavour from the port.

 

Enjoy. ps I use proper usa cup measures for mine.

Dairy Free Korma sauce. 

The recipe makes a sauce that can be added to meat, fish or veg.  I missed takeaways when I had to give up dairy 

We sometimes have chicken but usually just sweet potatoes and chickpeas

I make a bean chilli too @ajm200.

I've put in the recipe the beans that I use - but you can use whatever you want. I buy tinned beans so I don't have to soak and rehydrate them, because I'm lazy! Also, you can adjust the heat to whatever you can tolerate, same with the spices.

When I serve this, I get some tortilla bread, cut it into 8ths with a pizza slice, and then bake the slices until they're slightly crispy as they're great for dipping in the chilli and using as 'spoons'.

3 Bean Chilli

Ingredients:

  • 2 x 400g tins chopped tomatoes
  • 400g cannellini beans
  • 400g borlotti beans
  • 400g black eyed beans
  • 1 white onion (peeled and finely chopped)
  • 1 red pepper (diced)
  • 1 yellow pepper (diced)
  • 2 sticks of celery (sliced)
  • 2 large garlic cloves (minced)
  • 1 tablespoon tomato puree
  • 1 tablespoon dried oregano
  • 1 tablespoon paprika
  • 2 teaspoons cumin powder
  • 1 bird's eye chilli (finely chopped)
  • Salt and pepper to season

Method:

  1. In a tablespoon of vegetable oil, fry the onions, peppers and celery and continue to fry until they start to brown and soften.
  2. Add the tomatoes and beans to the pan, along with the spices, puree, and garlic, and cook until the beans have softened.
  3. Serve up and enjoy!

Just made the most amazing soup that I think you would love; a combination of 2 recipes; it contains:
 
1 tablespoon coconut oil
1 diced butternut squash or sweet tater
1 onion roughly sliced
2 garlic cloves, chopped
2 carrots sliced thinly
1 celery stalk chopped up
300ml of veg stock (I use 2 organic Kallo veg stock cubes)
2 large handfuls of spinach
1 lemon, zested and juice
1 tablespoon of freshly grated turmeric and ginger (wear gloves for the turmeric; it will stain EVERYTHING!)
1 can of Biona mixed organic beans
1 avocado
1 red sweet pepper
Dried chilli flakes
chopped fresh dill or parsley
 
Cook the onions and garlic in the coconut oil, add all the other veg and beans, and cook through. Add stock, and bring to the boil, lowering to a simmer for 20 mins or so until the veggies are tender but not mush. At the end, add lemon juice, spinach and avocado and cook for a little longer to warm them through. Season and serve with a good chunk of home made wholemeal bread.

Indian Coffee recipe
I want to share my favorite Indian coffee recipe. Indian Espresso Coffee made without an espresso machine.
Ingredients:
Instant Coffee Powder - 1 tbsp.
Granulated Sugar - 2 tbsp. (alter according to your taste)
Milk - 1 cup (240 ml)
Water - 1 tsp.
Cocoa Powder - To sprinkle on top (optional)

Instructions
In a coffee mug, put instant coffee powder and sugar. Add 1 tsp. water and mix.
With a spoon, start beating the mix vigorously. You have to incorporate as much air as you can. That will give you the whipped frothy coffee-sugar mix. The more you beat, the mix will become pale in color. Make sure your mix is whipped and creamy enough.
Heat a cup of milk and pour it over the whipped coffee-sugar paste. Stir. Sprinkle cocoa powder and serve immediately.
Of, course who have a coffee percolator - it would be easier to prepare.

Notes:
To make more than 1 cup, prepare the coffee-sugar paste in a bowl. Divide the pasta equally into each coffee mug and pour hot milk. Stir and serve.
