I love herbal teas, and have decided to make my own. Has anyone got any tips for me?

 

I am currently making my first lemon balm tea, but am not sure how many leaves per so many ml should make a good infusion. I suppose trial and error for now, but it would be good to know what other people do successfully.

 

I've used about 11 leaves- almost all my herb! Now for the taste test...

 

oh and I've also got chamomile but its not flowered- when do they usually flower or does it vary?

I use about 5 lemon balm leaves per cup/ per person, but I suspect it depends on personal taste to some extent.
