Abbey Road Girl Posted May 7, 2008 Share Posted May 7, 2008 When there wasn't enough of the Sunday lunch joint/gravy left over for hot sandwiches, my family often fell back on "smashed eggs" for our evening meal. Simply hard boil a couple of eggs per person, peel and mash up finely with a fork while they're hot, adding loads of butter and seasoning with salt and pepper. Lovely with or on toast.
