When there wasn't enough of the Sunday lunch joint/gravy left over for hot sandwiches, my family often fell back on "smashed eggs" for our evening meal.

 

Simply hard boil a couple of eggs per person, peel and mash up finely with a fork while they're hot, adding loads of butter and seasoning with salt and pepper. Lovely with or on toast.

 

The trick is to use Gary Rhodes' lavish amounts of butter.

my hubbys family do this with broken up bread in a cup and literally serve with a teaspoon, ala: egg in a cup

The DH loves to do this. I really like the sound of it now actually, I'mm getting quite hungry.
