As an alternative to egg and cress, simply add sliced green olives (the kind stuffed with pimento) to your egg mayonaise.

 

Fried egg sandwiches (as I have known them anyway) are made with fresh bread smeared with tomato catsup. When you fry the egg, break the yolk and spread into the white. Be sure and fry your egg nice and crispy and season with salt and pepper.

 

Simple pleasures! :D
