Nicola H Posted March 11, 2005 Share Posted March 11, 2005 No problem Trish here goes :- Chocolate and Almond Cake Serves 8-10 225g butter 225g soft light brown sugar 225g dark chocolate melted 5ml vanilla essence 6 large eggs 225g ground almonds 15ml icing sugar, sieved Method......Butter a 9inch springform cake tin and line the base with baking parchment. In a mixing bowl, cream the butter, gradually adding the brown sugar. Beat until the mixture is soft and fluffy. Beat in the cooled melted choc. vanilla essence, and the eggs, one by one, beating well after each addition. Lastly, fold in the ground almonds. Pour the mixture into the the prepared tin. Bake in the oven pre-heated to 180 degrees C (350degrees F/gas mark 4) or the bottom right oven in four-door Aga, for 35-40 mins. (when a skewer is inserted into the centre of the cake, some of the cake mixture should stick to it.) Allow the cake to cool in the tin then turn it out and sprinkle on the icing sugar. Serve with thick cream and enjoy, don't be tempted to over cook it I find it does need at least 40 mins to cook get the oven up to temp. first. Good luck hope you manage to make it..................
