I have a problem......Chookiehubbie and the boys have taken to spending their weekends fishing, and they are good at it. So I'm drowning in a sea of trout at the moment. The freezer is full of them, all gutted, lying there looking at me everytime I go into it, and I've no idea what to do with them. I tend to just bake them with a bit of butter, which is delicious, but is getting a bit boring (Trout!!!! Boring!!! ) I found a recipe in this months Good Food for salmon en croute , that would apparently work well with trout, but I'm looking for some other suggestions please.

I reckon you ought to give trout as christmas presents to people!

Do you like olives? There is a recipe in my italian cookery book for 'Trout Baked in Paper with Olives' which I will post if you want? It involves green olives, pancetta, shallots, parsley, dry white wine.....

 

I wonder if you could make trout fishcakes?
