henny penny Posted February 9, 2009 Share Posted February 9, 2009 Hi I cooked this at the weekend in my slow cooker.( His original recipe is cooked on the stove) I cooked it on high as I started late in the day- also I had run out of Tikka masala paste and used a balti one instead. It still worked fine. So i thought i would post this for other slow cooker chefs to try! Jamies Chicken tikka masala Serves 4-6 4 skinless chicken breasts cut into 2cm strips (I diced mine) 2 med onions peeled and sliced 1 red chilli finely sliced thumb piece of fresh ginger peeled and finely chopped small bunch of coriander- leaves kept separately , stalks chopped vegetable oil k"Ooops, word censored!" of butter 1/2 jar of Pataks tikka masala curry paste sea salt and pepper 1x 400g tin chopped tomatoes 1x 400 ml tin coconut milk (i used half a can) Heat a little oil and butter in a frying pan and add the onions, chilli, ginger,and coriander stalks( if you have them -I didnt and left them out) until they soften and turn golden. Then add the chicken and the curry paste. Stir well add the tomatoes and the coconut milk ( i only used half a can). Bring to the boil and add to the slow cooker. I cooked mine on high as I started late in the day - low should be fine if left all day. Season before serving If cooking in the oven or on the hob I would use the whole can of coconut milk and Jamie says to add an extra can of water. Serve with yoghurt and rice.
