baked beans--how to make from scratch or simply jazz up

Want a 19th century recipe for baked beans? Someone had indicated that they would like to make their own and I have an American cookery book which might be of interest. Will be happy to post the recipe.

 

In the meantime, here's a way that I have always jazzed up tinned baked beans:

 

Open one or more tins of baked beans and drain off as much of the liquid as is easy. Mix into the remaining beans some finely chopped onions, a smaller amount of chopped green pepper (optional), a big dollop of catsup and a similar amount of dark treacle/mollases or muscavado sugar. A small bit of mustard is allowed as well.

 

Put this mixture into a baking dish and plunge chopped bacon down into it and then across the top. Bake until the bacon on top is crispy.

 

Yummy!
