Boiled eggs - shell sticks

I think that this is because they are so fresh. It tends to be easier when the eggs are slightly older which is why you don't have as much of a problem with shop bought eggs. I tend to use older ones for peeling. There may be a different more scientific reason but this is my theory and I'm sticking to it :)

This happens to me too and my scientific reasoning is this....Ready????

 

To test for freshness with eggs you put them in a bowl of water. If they sink they are fresh, if they float they're not. So to my mind, the staler they are, the more air is in there, between egg and shell, making it easier to peel. Simples :lol:

Yes, it is because they are so fresh. If I'm planning to hardboil eggs, or make meringues, I save some of the older eggs. When they are fresh there is less air in them (hence the sink/float test) and it's the air gap between the shell and the membrane that helps the shell slip off.

 

When you're peeling eggs. bash the pointy end first as that's where the space is, and peel downwards from there under a running tap, to make it easier.

Thank you for your replies, my problem is now solved although it does kind of defeat the object of eating nice fresh eggs lol!

 

not really, there's always...

 

cakes

omlettes

scrambled eggs

fried eggs

poached eggs

lemon curd

custard

dippy eggs with soldiers

pancakes

waffles

pastries

 

to name just a few, just don't use fresh eggs for boiled eggs.
