I've just bought lots (4kg )of very cheap strawberries only to find I have no jam sugar or pectin and there's none to be found in the shops. However, I do have some frozen crab apple juice that I strained from boiling up the fruit last year. Can I use this in place of pectin? How much do I need to add? Can you just use ordinary sugar?Strawberries need pectin like most soft fruits, citrus don't. I eventually managed to get hold of a bottle of Certo fruit pectin, it didn't work too well with the first batch but I added a tub of homemade crab apple juice and half a bottle of Certo for the second batch and it set a bit better.
