majorbloodnock Posted October 31, 2012 Share Posted October 31, 2012 You can use beetroot in exactly the same way as carrot, so you can grate it raw into a coleslaw. Whether or not you peel it first depends on how clean you can get it and whether or not you're someone who peels carrots before grating. If you want an alternative for beetroot in a salad, try this: Peel a grapefruit-sized beetroot (or multiple smaller ones to make up the same kind of amount), then co"Ooops, word censored!"ly grate into a bowl. Squeeze the juice out of a lime, then add to the beetroot. Add about a quarter of a teaspoon of sugar and enough salt and pepper to taste, then mix the whole lot up so everything's got a soaking in the lime juice. Cover the bowl and chuck into the fridge. Leave for a couple of hours, or even overnight if you can, before serving. Crunchy, tangy and aromatic. Best in a salad that's accompanying something gutsy like cheese or meat.
