Mary Berry' Chocolate Recipes

Hello All

 

I just wanted to ask if anyone has come across 39% chocolate ? I recently purchased one of her books

Mary Berry & Louise Young At Home, and all of the chocolate recipes call for 39 % chocolate (cocoa solids) as they state this works perfect as it's not too sweet or bitter, I quite like the sound of it but cannot for the life of me find any anywhere, even if I could get 2 bars to make up the amount would be great but I can't even do that ....

 

I looked on her website and anything recipe related won't be answered. Any suggestions are greatly welcomed

Most 'plain' chocolate is somewhere around that % cocoa solids. I am sure it wouldn't matter if you used (for example) 45% cocoa solids. I tend to use supermarket own brand plain chocolate. I guess they have stated 39% to avoid confusion with either milk chocolate or dark 70%+ cocoa solids, neither of which are suitable for most recipes.

Thanks for your replies never to thought to look at good old Bournville ! This could be where I have been going wrong all this time.... I absolutely love rocky road and after sampling every shop bought one I decided to have a go myself, and started with good old Nigella's but it didn't set very well ( her recipe called for 70%) so I got Meniere,it just didn't seem to coat the biscuits. of course everyone said it was lovely but I felt disappointed with it.

 

I will give it a try, I'm sure you can buy the large bars of Bournville, and if anyone has a nice recipe for Rocky Road Iwould love to give it a go.
