The $250 cookie

4 oz butter/margarine

2 oz light muscovado sugar

2 oz demerara sugar

1 egg

4 oz plain flour

1 tsp baking powder

1/2 tsp bicarbonate of soda

3 oz porridge oats

1 oz desiccated coconut

6 oz chocolate chips (it's nice to use a mixture of white, plain and milk choc chips)

3 oz chopped walnuts - optional (nice enough without them!)

Cream butter and sugar until light and fluffy. Beat in the egg then the flour, baking powder, bicarb and oats. Stir in coconut and chocolate chips. Take walnut sized balls of dough and place fairly well apart on greaseproof paper lined baking sheets. Bake in a pre-heated oven at 180C for 15-17 minutes. Cool on racks.

Peanut Butter Cookies

4 oz butter

1/2 tsp vanilla extract

2 oz caster sugar

2 oz light muscovado sugar

3 oz peanut butter

5 oz plain flour

1 tsp bicarbonate of soda

Cream butter and sugars together. Beat in peanut butter, flour and bicarb. Roll dough into walnut sized balls and place on greaseproof paper lined baking sheets. Flatten the biscuits slightly by pressing down with your fingers. Bake at 180C for 15 minutes and cool on the baking trays.
