Nigella's Rhubarb Schnapps

The recipe is in Nigella's How To Be A Domestic Goddess book and is so very easy.

 

Take 600g prepared rhubarb (washed and cut into chunks) and put it in a large Kilner type jar (I've got mine in a 2 litre one so there's plenty of room for shaking!). Add 300g caster sugar and a litre of vodka. Put on the lid firmly and shake well. Leave in a dark place for up to 6 months, shaking daily for the first month. Strain, then bottle into clean bottles and enjoy!
