BANANA BREAD

It is more like a cake, but gets its name from being baked in a Bread Tin.

 

INGREDIENTS

 

 

3½ oz/100g Sultanas

3 fl oz/75 ml Bourbon or Dark Rum

6 oz/175g Plain Flour

2 Teaspoons Baking Powder

½ Teaspoon Bicarbonate of Soda

½ Teaspoon of Salt

4½ oz/125g Unsalted Butter, melted

5 oz/150g Sugar

2 Large Eggs (Preferably Free Range and at room temp)

4 very ripe Bananas (about 10½ oz/300g)

2½ oz/60g Chopped Walnuts

1 Teaspoon Vanilla Extract

 

9x5x3 inch/23x13x7 cm Loaf Tin, buttered and floured or with paper liner.

 

 

METHOD

 

 

1. Put the Sultanas and Bourbon or Rum into a smallish saucepan and bring to the boil.Remove from heat, cover and leave to stand for at least an hour to enable the Sultanas to absorb the liquid. Drain if any liquid remains.

 

 

2. Preheat the oven to 325F/170C/Gas Mark 3.

 

3. Mash the Bananas until nice and smooth.

 

4. Put the Flour, Baking Powder, Bicarbonate and Salt into a medium sized bowl and combine well.

 

5. In a large bowl, mix the melted Butter and Sugar and beat until blended.

 

6. Beat in the Eggs one at a time, then the mashed Bananas.

 

7. With a wooden spoon, stir in the Walnuts, drained Sultanas and Vanilla Extract.

 

8. Add the Flour mixture, a third at a time, stirring well after each addition.

 

9. S"Ooops, word censored!"e into the Loaf Tin and bake in the middle of the oven for about 1 hour. (Check with a fine skewer after about 50 minute if using a Fan Oven) When cooked the skewer should come out cleanish.

 

10. Leave in the tin and place on a rack to cool.
