Pevensey Sue Posted August 16, 2008 Share Posted August 16, 2008 Serves 2 as main meal 6 eggs lemon (zezt and juice of one) handful of whatever herb you are growing well (parsley and lemon mint work well) 300 gms crab meat s and p 2 dried chillis Tbsp of Olive oil and of butter Lightly whisk eggs. Add and combine all other ingridents except chillies and fats. Heat butter an oil, combine until semi set. Remove from heat and sprinkle over dried chillis (I use a good pair of kitchen scissors to 'cut' them in to small pieces.) Pop in aga or oven (poor with oven temps as have an aga!! Would think approx 200 C) for 7 - 8 mins. Serve in big slices with a good salad, wedge of garlic bread and a nice glass of Pouilly Fume!! So simple and a mid week treat! Also works well with prawns forgot to say! My local fishmonger does 300gms of mixed crab meat for about £8.
