Here it is: Nutty Silton Roast Ingredients 2 onions, 1 finely chopped, 1 cut into thin wedges 3-5 garlic cloves, crushed 2 celery stalks, finely sliced 175g cooked peeled chesnuts 175g chopped mixed nuts 55g ground almonds 55g fresh wholemeal breadcrumbs 225g Stilton cheese, crumbled 1 tbsp chopped fresh Basil 1 (fresh free range homegrown laid by own chook) egg, beaten Seasoning 1 red pepper sliced 1 courgette sliced Method 1) Slowly fry chopped onion with half of the garlic and all the celery for about 5 minutes 2) Drain and put in food processor with nuts, chestnuts, breadcrumbs, half of the stilton, and Basil. Pulse slowly to blend ingredients, then blend in egg to make a stiff mixture. Season 3) Fry remaining garlic with red pepper, onion wedges and courgettes. 4) Put half the nut mixture in a lightly oiled 2lb loaf tin, cover with fried onion, red pepper, courgette mix, top with remaining stilton. Top this with remaining nut mixture. Press down firmly 5) Cover with foil and bake in 180c/350f/ gm4 oven for 45 minutes 6) Remove foil and bake for a further 20-25 minutes.
