It is a cross between an quiche and a frittata. Hope you like it! My mum in laws crustless courgette quiche recipe 3 cups courgette grated 1/2 cup oil 1/2 cup finely chopped onion 1 cup grated cheese 4 eggs 1 cup scone mix ( supermarket mix or I use delias scone mix see below) mixed herbs ( if wanted) salt and pepper delias scone mix: 4oz SR flour 1/2oz milk powder 1 dessertspoon sugar ( can reduce if wanted) pinch salt Mix everything together and put into flan dish Bake at 160 degrees C ( circotherm) for 50 mins ( or until golden and set- do keep an eye on it as I made it last week and it didnt take as long- I would check after 35mins onwards) . This makes a large quiche or two small ones (in which case the cooking time needs to be reduced) Will freeze! henny penny Posted August 30, 2009 Author Share Posted August 30, 2009 Yep you add 1 cup of the scone mix to the rest of the ingredients and mix together before putting in the flan dish. This flan doesnt have a pastry base- its more like a frittata. I used to use an american scone mix from the supermarket- it made the flan very sweet. and i never had it in the cupboard when I needed it so I started making my own which works just as well! I think my original recipe suggested parsley and mint herbs but I made it recently with the mint but felt the aftertaste was a bit little toothpaste- so not a good one!
