Bottling and pickling question

Hi I am in the middle of bottling plums for the first time but noticed when filling the jars with the fruit- that the fruit always bobs up above the top of the liquid into the lid space. It also happens with onions when pickling them - does this happen to other people and does it matter? or can this be avoided?

Hi

I'm pleased with the two jars ive made so far- definitely got a space at the bottom - lovely pink coloured liquid/ I will be more forceful and pack more in next time!

I made mine on the top of the hob as they were clip jars and it would appear that the lid is put on but not clipped tight when using the oven method- but my lids didnt sit down on the rim and i thought i was going to lose alot of liquid from evaporation. How do others cook theirs?
