Mulled Cider Serves approx 6 1 ltr cider 60ml dark rum 250ml apple and ginger tea made form a herbal teabag 40g soft dark brown sugar 2 clementines 4 cloves 2 cardamom pods 2 sticks cinnamon 2 fresh bay leaves Pour the cider, rum and herbal tea into a wide saucepan, add the sugar and put it over a low heat to mull. Halve the clementines and stick a clove into each half, adding them to the pan. Tip in the cinnamon sticks, broken in half, and the bay leaves and cardamom pods. Bring almost to the boil and then turn down the heat to just keep it warm. Ladle into heatproof glasses with handles.
