Does anyone please have a simple, tried and tested recipe for apple jam - or maybe even apple jelly I don't have preserving sugar, but plenty of granulated. Couperwife Posted September 29, 2009 Share Posted September 29, 2009 there is a recipe for Cider Apple Butter in the River Cottage Handbook, I assume its tried and tested, but I havent tried it out yet. apparently a butter is like a sauce that you might put on icecream they say its a fruity spread to daub over hot buttered toast or crumpets so... makes 5 to 6 225g jars 1.5kg cooking apples 600 ml dry or meduim cider granuated sugar 1/2 tsp ground cloves 1/2 tsp ground cinnamon you dont need to peel or core the apples, but cut out any bruised or nasty bits chop apples into fairly big pieces (each apple into eight) place in a large pan with cider and 600ml water cook until soft and remove from the heat push mixture through a nylon sieve and reduce to a puree weigh the fruit pulp and add 340g sugar for every 600ml of fruit pulp add cloves and cinnamon, slowly bring to the boil stir until sugar is dissolved, boil rapidly for 10 to 15 minutes until it begins to splutter and goes thick and creamy remove from heat and put into steralised jars. this has a relatively short shelf life once opened, but will sit quite happily stored in a sealed jar for 12 months enjoy actually, this sounds really nice, I think im going to raid SILs tree cathy x Quote Link to comment Share on other sites More sharing options...

Bramble and apple, apple and clove (supposed to be crab apple, but I use them interchangeably!), apple and rosehip (deeeelicious!), apple and rosemary to have with pork. I also made apple and ginger - started off stewing the apples and straining to get the jelly juice, then added some minced crystallised ginger - another one that is deeeelicious! I'll post the recipes when I get home from work if there are any you fancy trying, but as long as you use a basic jelly recipe, the rest is just experimentation! Have made 6 jars and still have about 10 more kilos of apples. Snowy Howells has suggested a jelly too, so probably tomorrow I shall do more apple butter and some jelly. I looked through any subject that had jam mentioned. I might just have missed it though. I have to say, I didn't realise this section was so interesting.
