We're having visitors round for dinner tonight & to watch the election results. I need recipes which will use eggs!

 

We're having fried quail eggs on miniature toast for a starter, with little cubes of black pud for the meat eaters.

 

Main course - am stumped. It needs to be veggie (or customisable), but my usual friends-for-dinner staples (Thai curry / daal / lasagna) just don't 'go' with quail egg starter.

 

Any suggestions?

I posted a recipe a few weeks ago for a gorgeous pasta sauce, which you could spike with a shot of Vodka,to make it more festive...

 

Will see if I can find a link - its gorgeous - we had it last night

 

No eggs in it though - sorry!

Its really easy,& you could serve it over tricoloure tagliatelle,which would look pretty,Spaghetti or filled pasta,one for the veggies,one for the meat eaters.

 

Another brill recipe which does uses eggs is my Full English Salad.

 

Fry Pancetta & cubed black pudding, add a slug of balsamic vinegar & cook down.

Serve over fresh salad,with a hot poached egg on top.

You could substitute the meat for some fried red onions for the veggies,maybe?

You could always scoop out some tomatoes, crack an egg in each, bit of cheese on top & bake in the oven?
