Got too much Rhubarb..

Recipies for Bhubard & anything crumble?

rhubarb crumble base is a doddle

 

chop rhubarb into small (about 1inch) chunks, peel it first if it looks like it needs it

 

put into pan with a bit of sugar - it doesnt need any water, but i always wash it first - just in case...

 

simmer it until its all soft and, well, like a crumble base (see baby food ) check the sugar content, keep tasting it!! -but beware, cos its gonna be hot.

 

add stuff to it to taste .

weve done, rhubarb and stem ginger, rhubarb and powdered ginger, seriouslty considering rhubarb and mango, cos ive got a tin of pureed mango that someone got me from spain (or somewhere like that)

 

crumble topping is easy too

for the whole rhubarb crumble thing

You could also try adding the finely grated zest and juice of an orange to rhubarb, makes it really yummy. I don't bother with the crumble topping sometimes just add a spoonful of creme fraiche.
