For our local show I am looking for good recipes for pineapple updsidedown cake. Can anyone help?

 

Also, would be particularly interested in hearing any tips for using silicone baking trays as i have bought a new one (was £7, in sale £2.50 from Tesco ), 23cms.

Can't help with the cake but I'm not very impressed with my silicone tins. You have to line and grease in my experience and the loaf tins sag outwards. Excellent for cooking egg shells for the chooks, you can roll up the mould to crush them.
