Lemon drizzle cake recipe help please

Rather rashly I've just promised to make a lemon drizzle cake for some very good friends, and I used to have a superb recipe, but I've just been searching for it so that I could get all the ingredients in when I shop tomorrow........... and I can't find the recipe anywhere :oops:

Does anyone have a recipe that they can recommend, either for this or another lemony cake? I'd prefer to try a tried and tested recipe that I know works as I don't want to end up offerring not great recipe to friends, and probably won't have time for a try it out on the family first attempt.

Hi Kate :D I tend to use a Mary Berry one that's very easy,

 

120gms (4.5 ozs) soft baking marge

120 gms (4.5 ozs caster sugar

175 gms (6oz) SR flour

2 eggs

1.5 tsp baking powder

3 tbs milk

finely grated rind of 1 lemon

 

for the topping

100gms (4oz) sugar

juice 1 lemon

 

put everything in a bowl, mix with a blender for 2 mins until smooth, pour into 12 x 9 greased and lined roasting tin

bake for 20-25 mins at 180 degrees C or gas mark 4 or 350 degrees F then remove from oven.

Mix together sugar and lemon juice, and brush over surface of hot cake, then leave to cool.

 

tastes nice warm or cold :D

I'm quite a dab hand in making lemon drizzle infact I get my windows cleaned for free in exchange for a cake! The receipe posted looks good, I always add a teaspoon of rich honey and a good shake of mixed spice. Also when the cake comes out of the oven piece it with a skewer several times BEFORE you pour over the syrup, that way the cake retains alot of the moisture and it stops it from drying out. Also don't make the syrup too runny as its nicer when its thicker on top.

Thanks Karen & Emily, I just knew someone on the forum could help me out :D:D . That recipe looks a lot like the one that I used Karen, may even be the same. I like the idea of adding honey & mixed spice to it though, never tried that before, but I might give it a go.

I can't imagine my grumpy window cleaner ever accepting a cake in lieu of payment though, but it sounds like a great system you've got running there Emily 8):D:D
