patsylabrador
I bought a lovely looking jar of honey which was locally produced in Oxfordshire by a bee keeper. When I went to use it I found it had expanded and was seeping out of the jar. It looks white and creamy, bit like a body butter. I don't fancy eating it as it's been so hot and humid the last couple of days, but I thought it must be useful in some way, honey being what it is. Does anyone have any ideas and as some of you are bee keepers, I am interested to know what happened to the honey. Is it a sort of fermenting process? chickencam
Is is frothy and slightly alcoholic in smell? If so it is fermenting if it is just solid and creamy in appearance it has just set which most honey will do when kept for a while some set very hard whilst some stay soft but turn opaque. If it seeping from th jar it sounds lie it is fermenting maybe you could make some mead (sp)? Honey usually keeps for years, my dad is a beekeeper and has been for about 30 years and in that time we have only had a handful of fermented jars.
