In the wet weather, inevitably the eggs get quite "muddy" on the outside. Can I clean/wash them or will this introduce bacteria from the outside of the shell to the inside? Obviously cooking will kill bacteria but if I am going to use the eggs soft boiled or raw (apple snow for instance) I need to know that they are safe as I don't want to poison anyone. Snowy Posted October 21, 2011 Share Posted October 21, 2011 The usual advice is not to wash them for exactly the reason you state. Washing removes the protective coating and allows bacteria through the shell to inside the egg. Clean off most of the mess with dry kitchen towel. If you need to wash them before use, use warm water so the contents expand, rather than contract and pull bacteria in. Or I think you can buy stuff for egg washing if you do a google search.
