The advice given on various websites seems to vary with some saying the eggs are better kept cool, others not. I think that the sites that say they should be kept cool are based on a commercial set up in which the storage temp is very stable, whereas in a domestic fridge the temp goes up and down a lot as the door is frequently opened. The same need for stable temperature applies to eggs kept out of the fridge so make sure you are keeping them out of sunlight etc so any temperature change is gradual. Eggs kept in the fridge do not cook well. Also bear in mind that most eggs in the supermarket are already a week or more old before they get sold. For us, as long as we eat enough eggs to avoid running out of space on the egg skelter, the eggs won't be more than a week old anyway. If we reach the top of the egg skelter I have a cooking spree and make things like ice-cream, chocolate brownies, quiche etc.! Quote Link to comment Share on other sites More sharing options...
