I recently purchased one of her books Mary Berry & Louise Young At Home, and all of the chocolate recipes call for 39 % chocolate (cocoa solids) as they state this works perfect as it's not too sweet or bitter, I quite like the sound of it but cannot for the life of me find any anywhere, even if I could get 2 bars to make up the amount would be great but I can't even do that .... Assume she wouldn't mention the brand as they weren't paying her! Lavenders_Blue Posted June 26, 2014 Share Posted June 26, 2014 Most 'plain' chocolate is somewhere around that % cocoa solids. I am sure it wouldn't matter if you used (for example) 45% cocoa solids. I tend to use supermarket own brand plain chocolate. I guess they have stated 39% to avoid confusion with either milk chocolate or dark 70%+ cocoa solids, neither of which are suitable for most recipes. nuttyone Posted June 26, 2014 Author Share Posted June 26, 2014 Thanks for your replies never to thought to look at good old Bournville ! This could be where I have been going wrong all this time.... I absolutely love rocky road and after sampling every shop bought one I decided to have a go myself, and started with good old Nigella's but it didn't set very well ( her recipe called for 70%) so I got Meniere,it just didn't seem to coat the biscuits. of course everyone said it was lovely but I felt disappointed with it. I will give it a try, I'm sure you can buy the large bars of Bournville, and if anyone has a nice recipe for Rocky Road Iwould love to give it a go.
