Abbey Road Girl Posted May 6, 2008 Share Posted May 6, 2008 It's been a while since I made this and the measurements are not necessarily exact, but I think it would be hard to go wrong on this. Yummy baked topping for vegetarian or non-vegetarian casserole: To one large tub of plain or Greek style yogurt, blend in a couple of large eggs or the equivalent in smaller eggs which have been well mixed. Stir 2 T plain white flour into one cup or more of shredded cheese (I use Red Leicester) and add to yogurt and egg mixture. Add a dash or more of Tabasco sauce. If you are baking your casserole for more than an hour, only add the topping at the beginning of the last hour. When it is nicely browned, it will be done. (Doh!) A tart dense souffle is the best way that I can describe it. Delish with tomatoes, beans, pasta, etc. I would double the recipe or increase it by half for a large dish. redhotchick Posted May 6, 2008 Share Posted May 6, 2008 A similar recipe uses a tub of cream cheese and an egg. mix it up, pour it over and bake. Can't for the life of me remember where I got that recipe from, although I have an idea it was a topping to a red lentil and courgette layer. with nutmeg in the lentil layer, I think.
