We bake and crush the egg shells and feed them back to the girls so I don't see why you can't scramble it, soft shell and all. Unless there's a good reason that I've overlooked? we sometimes get eggs with cracks in and throw them in the bin, never thought of scrambling them and feeding them back to the chickens, will do that in future.
