Cinnamon
SARAH'S GRANS BREAD PUDDING Rip up 500g of day old white bread. Pour over 280 ml of milk & allow to stand for at least an hour, pref overnight. Pour on another 280ml of milk,& add 2 beaten eggs,75g Raisins,75g Currants, grated zest of a lemon ,2tsp mixed spice & 125g demerera sugar. Mush it all together with your hands until all mixed up. Put into a tin (about 20cm square) which has been greased & the base lined with greaseproof. Sprinkle the top with 25g more Demerera,& bake for 1 an a half hour on 150c/Gas2,until golden & springy. I often add different spices or fruit - candied peel is good ,as is a layer of apple in the middle
