Quite fitting really 2 ripe bananas 175g butter 175g caster sugar 3 eggs 225g SR flour half tsp baking powder half tsp vanilla essence half tsp ground cinnamon Preheat oven to 180 C gas 4. Mash banana with a fork. Beat butter and sugar then add eggs alternately with the flour and baking powder. Fold in the banana, vanilla and cinnamon. Pour mixture into a greased 1lb loaf tin.
