It's very simple: Warm double cream in a sauce panAdd grated cheeseStir until cheese is melted It's just the right consistency, rich, incredibly creamy (not for those on a diet!). And it pours lovely. And all these years I've been messing around with flour and butter and all the bits and bobs. This is so quick, no mess. My sauce is for a mac & cheese, so I dashed in a bit of worcestershire sauce and mustard, and stirred in a bay leaf while the cream was warming, but it's a basic cheese sauce for all kinds. My son loved it so much, he's asked for more "cheesy pasta" (as he calls my mac and cheese) for breakfast. And my chef-hobbyist husband, who usually does the fancy cooking around here, was impressed, and he's usually a you-must-always-do-a-proper-rue kind of man. So far so good.
