This would be a good idea when you have a large group to feed. Per person: 1 LARGE TOMATO 1 EGG TABASCO SAUCE TAKE THE TOP OF THE TOMATO(I PUT THIS ASIDE AND COOK ALONG WITH) SCOOP THE INSIDE OF THE TOMATO OUT AND PUT ASIDE.* RUB INSIDE OF TOMATO AND OUTSIDE WITH A LITTLE OLIVE OIL. BREAK EGG INTO CENTER OF TOMATO(use a deep small bowl so you can easily add the excess tomato bits) TOP WITH TABASCO SAUCE COOK FOR 15-20 MINUTES IN VERY HOT OVEN (Gas 8 ) UNTIL EGG SETS. (If you don't want to add the scooped out tomato insides, your hens will love them and you can put two eggs inside the tomato shell instead of one.
