My broad beans are ready to harvest. OH says you have to blanche them before freezing???? I can't find anything that says this in my gardening book. Is this the case or can i just freeze them straight from the pod?

Most veg are better if blanched before freezing - it kills off the enzymes which will spoil the food.

 

I sometimes freeze prepared runner beans without blanching, but broad beans would be better blanched.

Just pluge them into voiling water and bring back to the boil for about a minute. It kills off the enzymes as Lesley said and also means that when you want to eat them all you need to do is put them back into boiling water from frozen and bring to the boil and if they were still young when frozen they will be cooked, which saves time later.
