Humous the Jamie Oliver way...


Tin of chickpeas

pinch chilli flakes

half teaspoon cumin

salt and pepper

clove of garlic

1.5 tsp tahini (I never have this in and just crush some sesame seeds in a pestle and mortar)

extra virgin olive oil

lemon juice


Pound chilli and cumin in a tsp of salt adding sesame seeds if not using tahini.


Put garlic and chickpeas in a food processor, adding the cumin and chilli mixture and pulse until smooth.


Add salt, pepper, oil and lemon juice to taste and pulse until you get the taste/texture you want.


I make this a bit loose, as it seems to firm up on sitting.
