Roasted and stuffed sweet peppers

A friend gave me some long sweet peppers (i think they are called romano or something like that)

so i halved them and filled them with cous cous, chorizo tomato, onion, garlic and i little veg boullion, all these have to be cooked off first then stuffed into the peppers, then topped them with some motzarella and cheddar...cook in a hot ish oven for about 10 mins yum yum they were really good.


I just used what i had left in avery bare fridge but i can think of loads of other lovely fillings.... like bacon and blue vinney

I do stuffed peppers or tomatoes quite often,& do a beef mince mixture with chopped courgete,onion,garlic,parmesan & some cinnamon.


Its a copy of a recipe I picked up in Zakynthos a couple of years ago,& is yummy :P

The cinnamon gives it a wonderful mediterranean flavour :P:P
