4m x 3m Omlet pen, cube, new auto door still boxed and coop light

Can't face another Omlette!!

 

Any ideas what I can make? Might be ablet o go shopping tonight to pick up some extras so anything considered.

Mexican Eggs - yum

 

Fry an onion, add seasoning & a bit of chilli (powder,fresh or puree)

Add a can of chopped tomatoes ,& let it cook down a bit.

Make dips in it & break an egg in each,scatter over some cheddar & cook on the top until set.

Finish under the grill to make the cheese bubbly, then finish with a sprinkle of coriander if you have it,.

Serve with crusty bread & rough red wine - delicious!

Lucky you we only have one layer at the moment and she is only laying about 3 a week

Thanks for those, I bought 2 quiche cases the other day so might have a go at those.

 

Were off to US for xmas for a week got MIL coming to sort the hens, am sure we'll have tonnes of eggs when we get back!!
