HFW Christmas Flapjack

Hi, I'm not sure if this is his recipe, but I found this on the internet, which might be it, or close if not?

 

Let's face it, Christmas is, among other things, a time to sit back and eat as much as you can. That's why I wanted to include a selection of special sweet treats. Sometimes, regular puddings just aren't enough. When the family need to be pacified, or friends tided over until supper time, I'd recommend you try offering one or two of the following. All these sweetmeats will keep well in airtight containers, so, if you wanted to get ahead, you could convene a big baking session a few days before friends and family descend. Stay focused and you could knock out all four recipes with little over an hour's work time.

 

Christmas flapjacks

 

Makes 15-20.

 

200g unsalted butter

 

100g golden syrup

 

100g soft brown sugar

 

Finely grated zest of 1 orange

 

Finely grated zest of 1 lemon

 

50g dried figs, chopped

 

250g porridge oats

 

50g spelt flour

 

100g cooked, peeled chestnuts, chopped

 

1 tsp ground cinnamon or mixed spice

 

Preheat the oven to 160C/325F/gas mark 3. Grease and line a 20 x 25cm tin. Put the butter, golden syrup, sugar, orange and lemon zest and figs in a pan. Heat gently, stirring occasionally, until the butter has melted and the sugar dissolved.

 

Mix together the oats, flour, chestnuts and spice in a large mixing bowl. Pour in the melted butter mixture. Mix everything very thoroughly together, then spread out in the prepared tin and bake for 25-30 minutes, until golden brown. While it's still warm and soft, cut into fingers, then leave to cool and set.
