I had to cater for my FIL funeral a couple of weeks ago, the service was at 11.00am on the worst day of the snow storms so all had to be prepared in advance. All very plain - wanted it to be traditional as he was 91. I did a gammon ham cooked in coca cola (sounds weird but tastes delicious) which can be cooked a couple of days in advance and sliced up the night before. Put the gammon in a pan and cover with water and bring to the boil. Once it reaches the boil drain all the water away and put 2L cola into the pan (the cheapest stuff you can get but must not be diet cola). Bung in half an onion, bring back to the boil, cover and simmer for an hour. Drain and leave to cool. To go with it we had crusty bread, irish soda bread, salad and a cheeseboard, a smoked salmon platter (cucumber strips done lengthways with a potato peeler, topped with slivers of smoked salmon and dressed with creme fraiche mixed with lemon juice. top off with ground black pepper and the zest of the lemon - takes 10 minutes tops). Boiled fruit cake, jam sponge, mini cocktail sausages, sausage rolls and a couple of bowls of kettle chips.
