We had this for breakfast this morning with our first eggs..

 

Basically you take a muffin tray and line the cups with butter. Then take some ham and make a basket (you may need to cut up a bit). Crack the egg in the basket add some fresh thyme/or chilli or pepper or anything you fancy then bake in hot oven for about 12 min. I usually check after 10 min as all eggs are different sizes and cook differently.

 

Have with a grilled tomato and nice toast... (I also sprinkle a bit of tabasco on top if no fresh chilli is available)

Mmm, that sounds lovely . Might just add that to my Omlet recipe favourites .

I used to make these in ramekin dishes. But I also put a bit of cheese on top near to the end of cooking.
