chickencam Posted May 11, 2009 Share Posted May 11, 2009 4oz/110g self raising flour 1 rounded teaspoon of ground ginger 1 teaspoon of sodium bicarb. 1.5oz/40g sugar 2oz/50g margarine 2 tablespoons golden syrup Pre-heat oven to 190 degrees grease 2 baking sheets sift flour ginger and bicarb into a bowl, then mix in the sugar. Lightly rub in the margarine until mixture is crumbly then add the syrup and mix to a stiff paste. Divide the mixture into 16 pieces and roll each into a ball, place on baking sheets leaving plenty of room to spread and flatten slightly. Bake for 10-15 minutes (keep an eye on them they burn easily) until spread and nicely golden and cracked. Cool on tray for 10 minutes then remove to cooling rack.
