This recipe makes about 2.5 kg (6lb) It is very pretty in the jar,but quite fiery & not as innocent as it looks 900g Tomatoes 1 large aubergine 1 Green pepper & 3 Red Peppers (big peppers,not chilli peppers) 700g Onions,peeled & finely chopped (food processor is fine) 4 fat cloves of Garlic 350g Granulated Sugar 300ml White wine vinegar 1 tbsp Salt 1 tbsp Coriander seeds 1 tbsp Paprika 2 tsp Cayenne pepper Skin the toms by plunging them in hot water,then peeling the skins off. Chop toms,aubergine,seed & chop peppers. Put into heavy based pan with the onion & garilc,bring to the boil ,cover & simmmer for 1 hour,until tender. Add the vinegar,salt,sugar & spices,bring back to the boil & cook over a medium heat until the sugar has dissolved. Continue to boil for 30 mins until it looks like chunky chutney. Stir often to prevent catching. Ladle into sterilised jars while still warm,seal & top. Store in a dark cupboard for at least a month.
