He loves Apple pies and Lemon Meringue pies so wondered if you lovely lot had any tried and tested recipes for me please. Mrs Frugal Posted June 16, 2009 Share Posted June 16, 2009 I have a nice lemon meringue pie recipe which works a treat and is easy peasy. It is extremely tried and tested here as we all love it! Lemon Meringue Pie 175g shortcrust pastry or a bought shortcrust flan case Filling: 40g cornflour 125g caster sugar 2 lemons Water 15g butter 2 egg yolks Topping: 2 egg whites 125g caster sugar 1/2 tsp cornflour A little extra caster sugar for sifting over 1. Line a 20cm flan ring with the pastry and bake blind (if you don't know how to, shout!) 2. Filling: in a pan combine cornflour, sugar, grated lemon rind and lemon juice made up to 300ml with water. 3. Bring to the boil, stirring. Cook for 2 minutes. 4. Remove from the heat, beat in butter and then the egg yolks 5. Pour into hot or cold flan case. 6. Topping: whisk egg whites stiffly. Whisk in 50g of the caster sugar until firm and shiny. 7. Sift the remaining 50g caster sugar with the cornflour and fold into the beaten egg whites. 8. Spread meringue on top of the filling in the flan case, making sure that it reaches the pastry all the way round and seals in the lemon filling. 9. Sift on a little caster sugar. 10.
