clare* Posted November 3, 2006 Share Posted November 3, 2006 I have just tried to make some fudge and it all went wrong. I was heating gently the milk, butter and sugar. Just as the butter as about there the mixute suddenly curdled What did I do wrong It looked like a pan of sick Before I try again, can anyone tell me what I did wrong. Fudge Makes: 450g Preparation time: 20 minutes, plus cooling Ingredients 350g granulated sugar 150ml milk 50ml cream 50g butter 1 tbsp cocoa powder 25g ready-made fondant icing Instructions Put all the ingredients, except the fondant, in a large pan. Heat gently, stirring, until the sugar has dissolved. Increase the heat and boil for 5-6 minutes, or until the mixture reaches 116°C on a sugar thermometer (soft ball stage), stirring continuously. Put the fondant icing into a heatproof bowl and pour the hot sugar mixture over it. Cool a little, then beat vigorously until the icing is completely incorporated and the fudge starts to thicken.
