Banana Flapjack recipe

Substitute 75ml of vegetable oil for the margarine.

From previous post "Lunch Box Baking"

It can easily be started off in the microwave in the same bowl that you'll do the mixing in.

 

These are lovely, I stored them in a tupperware for a few days and they kept fine, after a few days I'd eaten them all up anyway! And it's a good recipe for using up a soft banana. They are quite sweet so the sultana tip is recommended. If you are experimental you could try reducing the margarine and adding another banana instead. I haven't tried any of the other fruit variations but they sound good!

 

Banana Flapjack

What You Need (makes 8-10 flapjacks)

75g (3oz) polyunsaturated margarine

2 tablespoons honey

75g (3oz) soft brown sugar

1 large banana mashed

200g (8oz) rolled oats (porridge oats)

How To Make It

Preheat oven to 180C/360F/Gas Mark 4.

Place the margarine, honey and sugar into a pan and heat gently until the sugar has dissolved.

Remove from heat, stir in the banana and oats, and mix thoroughly.

Press into a lightly greased small square baking tin (approx. 1 inch deep).

Bake for 35-40 minutes until golden brown.

Leave to cool completely before removing from the tin.

Store in an air-tight container.

Try making different flapjacks:

Banana and sultana flapjack: add half a cup of sultanas and reduce the sugar content by 25g (1oz).

Instead of banana try other fruits such as pureed/finely chopped apple, peaches or apricots.

Thanks RHC - its amazing how quick everything is done. will puruse site - my kids are loving the recipes, ES's (13) mates are always begging nibbles of this and that!! ES says their mums dont cook. Sad really as they miss so much nutritous food. Thanks again

The banana flapjack recipe was from a school website, so was aimed at being something children could do themselves or with some supervision. At 13 maybe they will start trying a few recipes themselves. It is a shame when parents don't pass on cooking skills, but if they are interested they will learn anyway (hopefully!)

You can do the first bit in a microwave instead of in a pan too.

Well the last one was munched tonight and I have made some of the chocolate ones also on forum. ES said friends seem very interested in the contents of his lunch bag. Teenage boys seem to eat and eat. His head is pernmanently in the fridge :shock: I agree they do enjoy cooking and my 2 can spot a homemade over shop made at 100 yds. The lunchbox site was excellent - mental note made of some goodies - thanks again
